Vegan Recipe for Lemon Drizzle Cake
Ingredients
    - 1/2 cup vegan butter
 
    - 1 cup granulated sugar
 
    - 2 cups all-purpose flour
 
    - 1 teaspoon baking powder
 
    - 1/2 teaspoon baking soda
 
    - 1/2 teaspoon salt
 
    - 1 cup vegan milk
 
    - 1 teaspoon lemon extract
 
    - 1/2 teaspoon vanilla extract
 
    - 1/2 cup freshly squeezed lemon juice
 
    - 3 tablespoons granulated sugar
 
    - 1/4 cup vegan butter
 
Instructions
    - Preheat oven to 350°F (175°C). Grease a 9-inch (23 cm) round cake pan and set aside.
 
    - In a large bowl, cream together the vegan butter and sugar until light and fluffy.
 
    - Add the flour, baking powder, baking soda, and salt, stirring until combined.
 
    - Add the vegan milk, lemon extract, and vanilla extract, stirring until combined.
 
    - Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
 
    - Meanwhile, in a small saucepan over medium heat, melt the vegan butter and add the lemon juice and sugar. Stir until the sugar is dissolved.
