Vegan Recipe for Lemon Drizzle Cake

Ingredients

  • 1/2 cup vegan butter
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup vegan milk
  • 1 teaspoon lemon extract
  • 1/2 teaspoon vanilla extract
  • 1/2 cup freshly squeezed lemon juice
  • 3 tablespoons granulated sugar
  • 1/4 cup vegan butter

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch (23 cm) round cake pan and set aside.
  2. In a large bowl, cream together the vegan butter and sugar until light and fluffy.
  3. Add the flour, baking powder, baking soda, and salt, stirring until combined.
  4. Add the vegan milk, lemon extract, and vanilla extract, stirring until combined.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Meanwhile, in a small saucepan over medium heat, melt the vegan butter and add the lemon juice and sugar. Stir until the sugar is dissolved.
  7. When the cake is finished baking, remove it from the oven and pour the lemon drizzle over the top of the cake. Let cool before serving.
